JOB SUMMARY:

DUTIES AND RESPONSIBILITIES: Responsible for scheduling, training and hiring of all culinary and stewarding staff.Assist the Director of Culinary Operations with budget compliance.Verify and ensure culinary operates in accordance with the direction given by the department director.Ablilityility and authority to hire, train and discipline staff as needed.Implement disciplinary actions and evaluations.In charge of consistency and presentation of all menu items, purchasing and inventories.Establish guidelines and maintain procedures for HACCP, sanitation, safety and general control.Create menus as well as specials ensuring that all specs and recipes are met consistently.Control food, labor and operating costs.Perform other duties as assigned. RequirementsGAMING INDUSTRY EXPERIENCE IS PREFERREDPREVIOUS WORK EXPERIENCE/EDUCATION REQUIREMENTS:* Requires four to six years of experience as chef at a large establishment (preferably Gaming or Hospitality Industry) with progressive supervisory experience.* Completion of Culinary school preferred. Excellent interpersonal, guest service, leadership, communication, analytical, decision-making and problem-solving skills are required.* A college degree in business or related field is required, unless otherwise waived by Executive Management of the Casino as based on determined experience and accomplishments.
