JOB SUMMARY:
<P>Job/Position Description Cook II The Cook II works a designated eight &#40;8&#41; hour shift in the Central Kitchen under the supervision Production Manager. Maintains sufficient knowledge of duties and related work to satisfy the requirements of the job and must be able to perform each essential and marginal function satisfactorily. Performs routine food service work. Work involves cooking, preparing, positioning, distributing and serving hot and cold food, theraupetic and texture modified diets&#59; preparing menu items according to menu, loading sheets and instructions, and sanitation of equipment, work areas, dishes, utensils and pots an pans. Handles food in accordance with federal, state and HACCP guidelines. Follows safety procedures and practices for kitchen and food service work. Other duties may be required which are reasonably related to the essential or marginal functions of the position. Essential Job Functions Attends work on a regular and predictable schedule in accordance with agency leave policy and performs other duties as assigned. Prepares menu items according to the menus, standardized recipes, loading charts and instructions following the food service procedures. Prepares and cooks all food items on the menu on a rotating basis &#40;meat, starch, vegetables, salads, desserts and breads&#41; &#40;45%&#41; Participates in distribution of food in a safe and sanitary manner according to the food service policies. &#40;5%&#41; Assists in service of food to clients according to their special needs following the food service procedures. &#40;5%&#41; Follows proper food handling in accordance to Federal, State and HACCP guidelines. &#40;15%&#41; Follows the sanitation procedures for sanitation of dishes and food service equipment. &#40;5%&#41; Follows the sanitation procedures for cleaning central kitchen areas and satellite areas. &#40;10%&#41; Observes safety procedures and practices for kitchen and food service work. &#40;15%&#41; Other duties as assigned include but are not limited to actively participating and/or serving in a supporting role to meet the agency&#39;s obligations for disaster response and/or recovery or Continuity of Operations &#40;COOP&#41; activation. Such participation may require an [INVALID]nate shift pattern assignment and/or location. Registrations, Licensure Requirements or Certifications None Knowledge Skills Abilities Knowledge of methods used in cooking, preparing and serving large quantities of food. Knowledge of general cooking techniques. Knowledge of therapeutic and texture modified diets. Knowledge of common institutional food service equipment and tools. Knowledge of food storage and sanitation regulations. Knowledge of food service sanitation techniques. Knowledge of proper food handling techniques. Ability to operate institutional kitchen equipment in a safe manner. Ability to lift and carry light to heavy items &#40;up to 50 lbs&#41; appropriately and safely. Ability to express oneself effectively and in a profesional manner, communicating information clearly and effectively orally and in writing. Ability to effectively utilize time while working independently and as part of a team. Ability to work effectively with food service staff, direct care staff, clients and others. Ability to compute simple arithmetic. Ability to read, write and follow oral and written instructions. Ability to apply learned skills effectively. Ability to adapt quickly to changing needs.
