JOB SUMMARY:
JOB DUTIES AND RESPONSIBILITES SUMMARYUnder the leadership of the System Director of Food & Nutrition Services, directs and coordinates the daily food production and kitchen activities at the assigned facility(s). The manager ensures a high quality, efficient and profitable food service program by maintaining a consistent program from shift to shift by replicating & coordinating activities, supervising the staff across all shifts, and tracking their activities using the S&W and department software. Maintains appropriate department logs and metrics to insure compliance for all regulatory agencies. Monitors performance, provides support for staff and creates an atmosphere of open communication throughout the department.PLANS OR PARTICIPATES IN PLANNING MENUS. DEVELOPS RECIPES AND DEVISES SPECIAL DISHES.* Takes into account the probable number of people served, popularity of various dishes and regional food preferences, and an appropriate menu cycle.* Works with the Retail Manager and Nutrition Services Manager in developing menus and recipes to meet the needs of patients and the preferences of S&W internal staff and those of S&W visitors and guests.* Develops menus and recipes that are within budgetary objectives and constrains. Works with the System Director and other Food Service Managers to assign prices to menu items.OBSERVES AND SUPERVISES THE FOOD PREPARATION, COOKING, PORTION CONTROL, AND GARNISHING OF FOOD TO ENSURE THAT THE FOOD IS PREPARED IN THE PRESCRIBED MANNER AND AT THE BUDGETED COST* Coordinates the assignments for the FS staff to ensure economical and timely food production* Tests cooked foods by tasting them* Adheres to all local, state and federal regulations. Keeps all necessary logs and records.MAINTAINS INVENTORY AND SUPPLIES AT ESTABLISHED LEVELS TO MEET BUDGET OBJECTIVES AND MENU ROTATION* Ensures food and supplies that are ordered and purchased achieve the quality/to price value and budget objectives desired.* Maintains a properly stocked store room to meet food production needs. Ensures refrigerated and dry stores are kept neat, clean, organized and accessible.ESTABLISHES, MAINTAINS, AND ENFORCES PROPER NUTRITION LEVELS AND DIETS TO MEET PATIENT NEEDS AND TO PROVIDE A RANGE OF DIET HEALTHY CHOICES FOR S&W EMPLOYEES AND VISITORS* Works closely with the Nutrition Services Manager to prepare and provide the patient diets as designed and required.* Demonstrates knowledge of specific needs and issues directly related to the various ages of patients or resident population.* Maintains a healthy, appealing variety of nutritional choices for the non-patient population using the various food service resources.DEMONSTRATES STRONG MANAGERIAL SKILLS WITH DAILY OPERATIONS AND PERSONNEL* Assures adequate staffing during all hours of operation* Ensures the skill level of the Food Service staff to provide the various duties required in the kitchen(s). Works with new employees to familiarize them with the policies, procedures and practices of the kitchen.* Provides on-going training programs to provide a safe and sanitary working environment. Establishes and enforces proper sanitation standards for the FS department.* Plans and schedules monthly department meetings and in-services to cover safety, infection control, body mechanics, communication tools, customer service, equipment usage, HIPAA and other department and/or S&W topics.* Assesses and redefines work flow processes as necessary to provide a more economical, efficient, or higher quality product.* Gives timely performance appraisals and identifies opportunities for personal growth and professional development for staff and self.* Manages assigned personnel, their job descriptions and work assignments. * Maintains employee records, tracks & records employee training.DEMONSTRATES STRONG LEADERSHIP AND FISCAL RESPONSIBILITY* Operates within budget by monitoring and controlling expenses including payroll, supplies, and capital expenses. * Manages salary administration, annual budget and payroll for the Food Service staff.* Monitors and reports monthly (or as requested) the quantity and quality of the food and other service activities provided by the Food Service Department. * Contracts (with approval) with outside service providers as necessary in order to provide, maintain, and upgrade the food quality, software, equipment, and basic infrastructure of the FS Department, or to lower cost while maintaining quality and service.* Recommends changes, improvements, upgrades as appropriate for the Food Service environment.DEMONSTRATES A STRONG COMMITMENT TO THE PHILOSOPHY AND VALUES OF THE S&W MEDICAL SYSTEM. * Cooperates and collaborates with the Scott & White leadership to champion and meet the strategic goals of the S&W medical system.* Ensures compliance with S&W and the Support Service Departments policies and procedures including appropriate attire and grooming as befits the management level.* Serves on departmental and/or S&W committees or focus groups as requested and needed.* Works with Human Resources in the recruiting, interviewing, hiring, counseling, disciplining and terminating of the Food Service Staff. * Complies with HR policies and procedures which include on-going staff training, timely performance appraisals, developing and mentoring staff, and maintaining confidentiality.DEMONSTRATES ACTIVE, PERSONAL DAILY INVOLVEMENT, VISIBILITY AND PROFESSIONALISM WITH S&W STAFF, AND ALL INTERNAL AND EXTERNAL CUSTOMERS AND SUPPLIERS. * Interacts effectively, builds relationships, and demonstrates a high level of customer service.* Continuously seeks ways to improve service, quality, increase utilization and decrease costs.* Communicates effectively with the System Director on a regular formal and informal basis to discuss pertinent progress, changes, or problems in the Food Service area.PERFORMS SUCCESSFULLY OTHER RELATED AND APPROPRIATE DUTIES AS ASSIGNED.KNOWLEDGE, SKILLS, AND ABILITIESEducation: Certified Food Service Apprenticeship or Degree desiredAssociates Degree or Bachelors Degree in Food Service Management, healthcare or a closely related field preferredTraining & Experience:* 5+ years in progressively responsible Food Service positions* 2+ years supervisory and/or managerial experience in food service, (healthcare experience desired)* 2+ years previous financial, contractual, and budgetary accountability and responsibility required* Proficiency in the use of Microsoft Office Suite software* Certification of Apprenticeship as a Chef or other related food service positionAbilities: * To interact and communicate with all customers and team members in a positive and professional manner.* To communicate appropriately verbally and in writing using the English language.* To comprehend instructions, correspondence, memos and other forms of verbal and written communication.* To analyze and create reports of data pertinent to the Food Service area* To give clear, concise and complete direction.* To effectively present information in one-on-one and group situations.* To deal with difficult situations and resolve customer service concerns.* To work and accomplish tasks in a stressful, fast-paced environment.* To organize work and design processes.* To create PowerPoint and other visual presentations as needed or desired.* To learn and use other S&W and Support Service software systems.* To work with and keep confidential information related to employees, patients, and other S&W information.
