JOB SUMMARY:
JOB DUTIES AND RESPONSIBILITES SUMMARYUnder the leadership of the System Director of Food & Nutrition Services, directs and coordinates the daily activities of the Retail Food Services production and related kitchen activities at the assigned facility(s). The manager ensures a high quality, efficient and profitable retail food service program by maintaining a consistent program within a facility from shift to shift by replicating & coordinating activities, supervising the staff across all shifts, and tracking their activities using the S&W and department software. Monitors performance, provides support for staff and creates an atmosphere of open communication throughout the department.DEVELOPS AND IMPLEMENTS A RETAIL SERVICE PLAN WHICH INCLUDES CAFETERIA(S), KIOSKS, AND OTHER RETAIL SERVICES* Takes into account the probable number of people served, popularity of various dishes and regional food preferences, and an appropriate menu cycle.* Sets portion controls and quality standards* Continually seeks ways to improve service, quality, and profitability in the retail service areas.* Sets retail prices based on bottom line costs with input from the System Director and the Production Manager.* Creates inviting and appealing retail area(s), which could include but not be limited to seasonal decorations, meal specials, theme events or promotions.* Markets the various retail services positively and effectively.PLANS AND/OR PARTICIPATES IN DESIGNING RETAIL MENUS FOR THE VARIOUS RETAIL SERVICE AREAS. MONITORS THE FOOD PREPARATION AND COOKING TO ENSURE THAT THE FOOD IS PREPARED IN THE PRESCRIBED MANNER AND TO MEET SET STANDARDS* Works with the Production Manager in developing menus and recipes to meet the needs and preferences of S&W internal staff and those of S&W visitors and guests.* Maintains a healthy, appealing variety of nutritional choices for the non-patient population.* Works closely with the Production Manager to determine production capability, portion controls, and bottom line costs.* Ensures menus and recipes are within production capability, budgetary objectives and constrains. * Ensures that retail quantity and quality is met during the production of the menu items.RESPONSIBLE FOR POINT OF SALES EQUIPMENT OR DEVICES* Ensures up-to-date programming for items sold, cost per ounce, and price.* Maintains cash registers and other sales devices to ensure working order at all times.* Works closely with the Food & Nutrition System Director to determine the types of contracts needed for the Retail Services and to recommend appropriate vendors.DEMONSTRATES STRONG MANAGERIAL SKILLS WITH DAILY OPERATIONS AND PERSONNEL* Schedules Retail Services staff. Ensures adequate staffing during all hours of operation.* Ensures the appropriate skill level of the Retail Food Service worker. Works with new employees to familiarize them with the policies, procedures and practices of the retail areas.* Provides on-going training programs to provide a safe and sanitary working environment. Establishes and enforces proper sanitation standards for the Cafeteria and other retail service areas.* Plans and schedules monthly department meetings and in-services to cover safety, infection control, body mechanics, communication tools, customer service, equipment usage, HIPAA and other department and/or S&W topics. (These meetings may be planned in conjunction with the other Food & Nutrition Managers.)* Implements and maintains proper work routines for the Cafeteria and other retail areas. Assesses and redefines routines and work flow processes, as necessary, to provide a more economical, efficient, or higher quality service or product.* Gives timely performance appraisals and identifies opportunities for personal growth and professional development for staff and self.* Manages assigned personnel, their job descriptions and work assignments. * Maintains employee records, tracks & records employee training.DEMONSTRATES STRONG LEADERSHIP AND FISCAL RESPONSIBILITY* Operates within budget by monitoring and controlling expenses including payroll, supplies, and capital expenses, if any. * Manages salary administration, annual budget and payroll for the Retail Food Service Area and Workers.* Monitors and reports monthly (or as requested) the quantity and quality of the Retail Food Service activities provided. * Maintains sales records and prepares appropriate reports.* Contracts with outside service providers, as necessary, in order to provide, maintain, and upgrade the software, equipment, and basic infrastructure of the Retail Food Service area, or to lower cost while maintaining quality and service.* Recommends changes, improvements, upgrades as appropriate for the Food Service environment.DEMONSTRATES A STRONG COMMITMENT TO THE PHILOSOPHY AND VALUES OF S&W HEALTHCATE. * Cooperates and collaborates with the Scott & White leadership to champion and meet the strategic goals of S&W Healthcare.* Ensures compliance with S&W and the Support Service Departments policies and procedures including appropriate attire and grooming for self and employees.* Serves on departmental and/or S&W committees or focus groups as requested and needed.* Actively works to improve Press Ganey, SWISS, and Gallup scores. *Works with Human Resources in the recruiting, interviewing, hiring, counseling, disciplining and terminating of the Retail Food Service Staff. * Complies with HR policies and procedures which include on-going staff training, timely performance appraisals, developing and mentoring staff, and maintaining confidentiality.DEMONSTRATES ACTIVE, PERSONAL DAILY INVOLVEMENT, VISIBILITY AND PROFESSIONALISM WITH THE FOOD SERVICE STAFF, S&W STAFF, AND ALL INTERNAL AND EXTERNAL CUSTOMERS AND SUPPLIERS. * Interacts effectively, builds relationships, and demonstrates a high level of customer service.* Leads and motivates employees to a higher standard of service.* Continuously seeks ways to improve service, quality, increase utilization and decrease costs.* Sets target scores for Customer Satisfaction and monitors the progress openly with the retail service staff.* Actively solicits Customer Feedback and suggestions regarding Retail Services. Responds to customer complaints in an appropriate and effective manner, seeking to resolve issues and concerns to the customers satisfaction. * Communicates effectively with the System Director on a regular formal and informal basis to discuss pertinent progress, changes, or problems in the Retail Service areas.PERFORMS SUCCESSFULLY OTHER RELATED AND APPROPRIATE DUTIES AS ASSIGNED.KNOWLEDGE, SKILLS, AND ABILITIESEducation: Bachelors Degree in Hospitality, Food Service Management or related field preferred.Training & Experience:* 5+ years in progressively responsible Retail Food Service positions* 2+ years supervisory and/or managerial experience in food service, (healthcare experience desired), with financial, contractual, and budgetary accountability and responsibility required* 1+ years experience & expertise in one or more Food Service point of sale and front of the house tracking software support systems.* Proficiency in the use of Microsoft Office Suite softwareAbilities: * To interact and communicate with all customers and team members in a positive and professional manner.* To communicate appropriately verbally and in writing using the English language.* To comprehend instructions, correspondence, memos and other forms of verbal and written communication.* To analyze and create reports of data pertinent to the Service Center* To give clear, concise and complete directions.* To effectively present information in one-on-one and group situations.* To deal with difficult situations and resolve customer service concerns.* To work and accomplish tasks in a stressful, fast-paced environment.* To organize work and design processes.* To create PowerPoint and other visual presentations as needed or desired.
