JOB SUMMARY:

Prepares specialized and complex food items (meats, vegetables, breads, salads, desserts, pastries).<p> Prepares food with attention to temperature, flavor, appearance, quantity and quality. Skilled in garnishing all food. <p> Performs preparation work by own initiative. <p> Maintains thorough knowledge of materials, methods, and equipment in preparing food on a large-scale basis. <p> Prepares new or special recipes as directed. <p> Trains new full-time and student cooks. <p> Operates standard cooking equipment to successfully complete tasks. <p> Customer service when needed during all meal operation times. <p> Replenishes food service units during meal service hours. <p> Assists in daily production amounts and inventory usage. <p> Follows proper handling and storage procedures on a constant basis. <p> Cleans pots and pans, dishes, utensils, floors, equipment, trash cans, dumpsters with proper chemicals and methods, and other tasks required.<p> Maintains cleanliness and sanitary conditions of the kitchen, food preparation and service areas. Considers personal hygiene and proper sanitation techniques at all times. <p> Cleans and sanitizes utensils used in cooking and serving throughout the day. <p> Attends cook meetings and training sessions. <p> Establishes and maintains effective working relationships. <p> Schedules the preparation of food to fit work schedules and meal times. <p> Stocks freezer and dry storage areas. <p> Must be able to operate and use other kitchen equipment necessary to successfully complete job tasks. <p> Performs clean-up work with the proper chemicals and knowledge of their use. <p> Must be able to operate an electric slicer. <p> Must be able to operate a fryolator. <p>
10th grade education or equivalent plus one (1) year related experience; additional education and/or related experience may substitute on a year for year basis.<p> This is a Security Sensitive Level I Position: Applicants for this position will be subject to a police records check and may be required to be fingerprinted.
Knowledge of the materials, methods, and equipment used in preparing food on a large scale basis.<p> Knowledge of health hazards and safety precautions involved in food preparation and service.<p> The ability to read and understand recipes and prescribed cooking techniques and to follow them accurately.<p> The ability to communicate and follow directions well, especially in English.<p> The ability to perform routine manual tasks with regard to the care and sanitation of the kitchen area.<p>
